Darker skies and warmer hearths herald the return of winter favourites, and for us that means Italian Alpine cuisine. Locals Johnny, Sophie, Felix and Adam return to the Muxima kitchen to share with you their discoveries from Valle d’Aosta to the Dolomites. Here’s what they have to say:
“We love the mountains. We love the big views, crisp air, and small, welcoming communities. But more than anything else, we love the food. Until recently we associated alpine cuisine mainly with cheese and cured meat, with fondue, raclette and tartiflette. Whilst that is true (you try and tear Johnny away from a fondue), it can also be so much more than that. Having spent some time in smaller rural villages in the Italian Alps last winter and over the course of this summer, we have come to realise the significance placed on food by those communities who grow, graze, and forage their own in and around the mountains. For them, each meal is a celebration of local produce and the environment in which they live. Whilst we can’t bring you the mountains, we can do our best to bring you the celebration.
